not sure if a FULL text of the testimony exists, but try the Loading Screen quotes thread:

there is no testimony in the actual game... the qoutes we see on the loading screen are slightly altered versions of some of his most memorable quotes from the first game

for example, the quote that ends with "there's always someone more powerful to come along and clip his wings"

in Mafia 1, the "and clip his wings" part was something else...

anyways, the loading screen quotes are all we have from the "testimony"
