I have played the PS3 Demo and all the issues I have seen in it mimic those of the Xbox 360 version (I will test out the demo for 360 whenever it becomes available to those who don't have Gold).
I know for a fact in some Xbox 360 games (retail version) screen tearing is persistent when having the system set to run games at 1080p (Resident Evil 5, Ghostbusters etc.) and the best thing I have come across is changing the resolution to 720p. But since the game demo (at least the PS3 version) only runs at 720p you could try changing it to 480p and see what happens, it will be a lot blurrier but you can scratch one issue off the list. I have tried this with the PS3 Demo (running at 480p) and there is no screen tearing...I think it has something to do with scaling and V-syncI hope this helps someone, it's a very cool game no doubt just hope the issues get fixed for the retail version.
