People are saying an economic victory is the easiest so here is my question: What can you do to cripple their income and other aspects to slow their victory? And can you create a Spy army and will they steal more gold than a single Spy?

steal gold with a spy, take the city making the money, or generally attack them (or nuke them) so they have to divert funds to stop you.
Whoa, thanks for the tips! Didn't expect to get it right from the source!
Isn't gold only used to buy roads though? How would I make them divert funds to stopping me, what exactly costs them gold so I know where to hit them hardest!!! Thanks.
you can spend gold to rush units. make em rush armies!
Wow I forgot about that!!! Thanks!
If you're talking about MP, you also want to plant some units on hills/forests near their key cities to watch for (and capture) settlers being sent from small cities to increase the pop of the big cities (big cities with lots of pop generate a ton of extra science in CivRev, so this is one strategy people seem to like). Horseman (or knight) armies should work to kill defensive escorts so you can capture the settlers. It wouldn't hurt to have some archer armies on the forest/hill plots to make it harder for them to dislodge you from those strategic spots near their big cities.
It's not the EASIEST. The best victory online is for domination, also in single player. How to counter that? Attack a lot your enemy while you have at least 3 armies of spies (not one), because he won't build them if you don't attack him using them. If you attack with 3 armies + 3 normal spies it will be good, take gold and destroy some buildings as bank, while you attack that city and continue.
I just had a brainwave!! Most of the gold is generated on sea squares, so build a ton of ships and turn the enemy cities coast into a parking lot. I've never tried it but I assume the workers can't use those squares anymore to extract the gold??
They then need to rush build ships/planes to counter and burn their gold reserves!
