I have to imagine custom images would already be an option in the mod tools.
The cross is already one of the options though.

I will say, the Civ 5 version of the cross is much cooler looking than the standard T-version of the cross.
It was the standard cross until about late Renaissance. Crosses with flared ends were popular in artistic works during that time.
What puzzles me is the symbol for the Byzantines. Firaxis insisted on using the Byzantine cross (which symbolizes only the church), when it should have been the Chi Rho, which Constantine carried into battle with him and represented the Empire itself.

You ask for this as if it's just an easy thing they can program in a minute. The way the system works, they'd need to create an icon for each keyboard symbol (a .dds file, alpha image, a low res version, etc.). It's completely not worth to create a 104 new icons just to support this feature (not the mention additional icons for foreign keyboards and special characters).
Now, asking for a few more religious icons (like, say, 10), one of which includes the dollar sign, is a much more reasonable request.
Even just add it in a mod... religion-adding mods are easy, just take a look at the Workshop.
