I don't remember a demo that differed much from retail in recent times, what you see a month before it hits the shelves is generally what you get, don't expect spec ops to be any different.
AI is often one of those things developers/publishers like to make bold claims about but tbh the last time I was really impressed by enemy AI was first meeting the marines in Half Life
I'm sure it's very difficult and I don't think 2k have made any bold claims, it's just a shame that it feels like you're moving from one mini hoard battle to the next, but that was probably just a design decision.
I'm hoping there are some smarter more challenging enemies at some point, they do seem like just early stage grunts.
