nop, never seen that. I think they only create legion and def type armies. Never seen knight armies etc neither.
Ive actually seen knight and tank armies and deity.. just never warrior or horse. Kind of strange.
Maybe try and play deity, and camp all their trade spots, maybe a horse army will appear at 2000AD
I have seen a warrior army once from the AI. It was aztecs or germans.

The spanish formed a warrior army against me last night to attack my city after camping a tile with a warrior next to a choke point I had setup they moved a third warrior onto the tile and armied up when I settled a new city near there.
I saw French fiesty have 9 warriors in one tile... Made my skin crawl.
